Default Honey Pale Ale Experiment

So I am venturing into the world of small batch brewing and I currently am starting to form my own recipes. I put together this recipe based off an american pale ale style but added some honey malt to the mash. I have 2 one gallon fermenters that I'm using and will be using 2 different yeasts (Coopers and Lallemand Munuch wheat). I'm just seeking opinions on my recipe and what people think about it's structure.

2.5 lbs- Pale malt 2-row
1 lb 5oz- Munich malt
5 oz- Honey Malt
2.5 oz- Toasted Malt (12L)

0.4 oz- Centennial Hops (11.1%) (60 min)
0.25 oz- Cascade Hops (6.8%) (20 min)
0.25 oz- Cascade Hops (6.8%) (10 min)
0.25 oz- Citra Hops (14.5%) (Flame Out)
Irish moss @10 min

Like I stated above I'm using Coopers Ale yeast and Lallemand Munuch Wheat yeast. I plan on fermenting for about 2 weeks and bottling for 2 to 3
