Default Honey Corn Fed Blond??? Hows does this sound???

Hey yall, Just wanted to get your opinion on this recipe..

8lbs 2-row
2lbs Maize
0.5lb honey malt
0.5lb buscuit malt
2lbs Orange Blossom Honey

1oz Spalt 60min
1oz Columbus 10 min

Its kindda a twist on Chris Knights Corn Fed Blond recipe. What do yall think?

I think it's going to be quite unique. It'll be dry - from 20-odd % of the grist being almost 100% fermentable - and the Honey and Biscuit malts ought to combine for an interesting flavor combination.

Bit of a theoretical own-goal, though. On the one hand, you've got lots of adjuncts (corn and honey), which dilutes malt flavor and body, and on the other you're adding that stuff back with specialty grains (Honey & Biscuit malts).

And why on earth would you waste such a noble hops variety with a lovely aroma like that? I'd reverse those and adjust the Columbus amount to meet the appropriate IBUs. Spalter is such a delicate, wonderful flavor and aroma, it's a shame to boil it all away.

When I went to college in the mid west, we used to make reference to corn-fed blondes, and it wasn't too complimentary
