Black IPA:
Grainbill:
22 lbs. Maris Otter
2 lbs. Crystal Rye
1 lb. Flaked Barley
1 lb. Carafa II
1/2 lb. Chocolate Wheat
1/2 lb. Roasted Barley
Hop Schedule:
3 oz. Warrior (90 mins) First Wort Hop
Mix 2 oz. each of 4 different finishing hops (Centennial, Citra, Amarillo, Cascade, Galaxy, Simcoe, etc...) Add 2 oz. of mix at 15, 10, 5, and 0.
Any American Ale Yeast (WY1272 would be great!)
Dry hop with around 3-4 oz. of similar hops.
Big beer to age:
American Barleywine
Grainbill:
22 lbs. Maris Otter
1 lb. Crystal 40
1 lb. Crystal 80
1/4 lb. Chocolate Rye
1/4 lb. Special B
Hop Schedule:
2 oz. Magnum or Warrior (60 mins)
1 oz. Chinook (0 mins)
3 oz. Centennial (0 mins)
American Ale yeast as well
