Default Help with Horizon Recipe

So it looks like snow in Portland has nixed my hopes of spending Christmas with my family. I took the week off from work though and have nothing to do except brew. Problem is I have no carboys free at this time.

I was thinking of breaking out my old coffee urn mash tun and making a 2 gallon batch to fill some Carlo Rossi jugs. I have a bunch of Horizon hops in the freezer and I was thinking of doing a SMaSH brew, so I can really key in the profile of these hops since I'm not very familiar. I'm also thinking of pitching a new vial of yeast and using this as a sorta starter for a bigger beer when I get back and can bottle my secondary.

I'm looking for suggestions for malt choices (It doesn't have to be single malt) and a yeast that will pair well with Horizons. What d'yall think?

A local brewpub here does a Pils/Horizon SMaSH called Northern Light. It's a nice quaffable blonde ale. I believe they use WLP002 as their house strain, even though it's really light it has a nice malty flavor.

When used for flavor the Horizon hop has a very spicy, peppery flavor. I love it as a high alpha hop, a 90 minute addition is very clean and neutral bittering similar to warrior or magnum.
