I have a problem that I am hoping you guys can help with... no, it's not venereal
My issue is that my beers tend to age poorly. I like big body intensive beers (the best example would be dopplebock, stouts, quadruples, etc.)
I usually age the lagers (bocks) for a 3-6 months (the ales much shorter) in the conical before transferring to kegs. My issue is that right after kegging they have full body, great flavor, etc. but after a month in the keg they get boring, flavorless, and lack body. Sure, they end up pretty good, but they lack the characteristics that I want in the beer. Any ideas?
