Default Head Retention

What kind of ingredients will give you a nice head of beer?
Gluten free ingredients. Any help is appreciated.

Oats? Spelt? Most important is probably a low enough fermentation temperature.

So, let's say that my beer has no head - could the reason be that the fermentation temp was too high? Are there other issues to consider?

Hops improve head retention.
