Default Have-A-Heart Trappe (Dubbel, cat. 18B)

7 lbs, 8 oz Belgian Pilsner Malt
2 lbs Weyermann Vienna Malt
1 lbs Briess Victory Malt
8 oz Weyermann Cara Munich I Malt
8 oz Gambrinus Honey Malt
4 oz Special B Malt
1 lbs D-45 Amber Candi Syrup
8 oz Amber Candi sugar
1 oz Saaz, Czech Pellets @ FWH
1 oz Tettnang, German Pellets @ 60 mins
Wyeast Labs Belgian Ardennes yeast

Mash temp: 154°F (Target had been 158°F)

The fermentation went a bit out of hand, and as a result it fermented down far more than anticipated. ABV jumped from an anticipated 6.7% to over 8.5%, well outside of the formal style.
