Default Getting ready for a Hoegaarden clone.. yeast questions.

I am getting ready to do a Hoegaarden clone and have a few questions...

1. I want to try reculturing yeast from the bottle this time around and wanted to know if i can reuse the yeast from Hoegaarden bottles or should i try another white beer?

2. Instead of DME/LME can Clear Candi Sugar be used. I have about two pounds in the freezer but no extract on hand.

3. After activity from the starter, how long will it keep in the fridge and what size stopper can be used with an airlock.

I can answer #1 for you: my latest beer is based off of a hoegaarden clone, and I cultured yeast from the bottle just fine, just make sure you step it up slowly and give it time.

I mean slowly work it up to starter size, begin with adding just a little DME/wort, and work up the size slowly, adding more, etc.

Not for a starter. The yeast may forget how to produce enzymes needed to eat wort.

Malto Goya from the grocery store can be used as a starter wort in a pinch.
