Default Fresh Hop Additions

What's the latest in the boil you would add fresh (wet) hops? I was thinking of doing 2-3 additions, 30-5-1. Would it be a bad idea to make the last addition at 0? I was thinking there may be a risk of contamination since the hops aren't exactly sanitized...

No hops are sanitary even commercial hops are just dried and ground up. Hops are naturally anti microbial you will be fine with late additions or even dry hopping.
