Default Feedback please - Brother Gray's BDSM (Belgian Dark Strong Malt) Ale

I pieced this together on Hopville.com. Please let me know what you think! May back off the Special B to lighten the color up a bit. I'm going to give it a go this weekend.


Malt & Fermentables
% WT Malt or Fermentable °L
68% 10 lb Belgian Two-row Pale 1 ~
14% 2 lb Sugar, Table (Sucrose) 1 ~
7% 1 lb Crystal 80L 80 ~
3% 8 oz Torrified Wheat (Briess) 1 ~
3% 8 oz Belgian Aromatic 23 ~
3% 8 oz Flaked Barley 2 ~
2% 4 oz Belgian Special B 220 ~

Hops/Adjuncts
boil 60 mins 1 oz Hallertauer Hersbrucker pellet 4.1% AA
boil 30 mins 1 oz East Kent Goldings pellet 5.0% AA
boil 15 mins 1 oz Tettnanger info pellet 4.5% AA
boil 15 min 1 ea Whirlfloc Tablet

WLP500 White Labs Trappist Ale Yeast
liquid yeast with low to medium flocculation and 78% attenuation
definitely make a starter, or use 2 vials.

Ferment 68-72F for at *least* 2 weeks, it's ok to let this sit on the cake for 3 or 4 weeks. Secondary for a week or 2 if you want a little more clarity.

Batch size: 5.0 gallons
Original Gravity 1.089(1.079 to 1.092)
Final Gravity 1.019(1.017 to 1.021)
Color: 16° SRM (Light Brown to Medium Brown)
Mash Efficiency 75% (I use Deathbrewer's method)
Bitterness 22.4 IBU
9.3% ABV
292 calories per 12 oz. - of course, if you're making this, chances are that's not a primary concern of yours.

Anyone? Looks good? Glaring problems? I was thinking of a brew 'in the vein of' (not necessarily a clone of) Chimay blue/Grand Reserve.
