Default Fall Hefe??

Well I threw my first IPA together a night or two ago. I'm excited for that one but I know its going to be a bit before I can drink it. I need something to start fermenting ASAP and am still debating about when to get something dark going, but I think I might want to try another wheat beer.

So do you guys think it'll be acceptable to the beer gods to make a fall hefe? I know wheats are typically enjoyed best in the summer but for some reason I thought I heard hefe's could be enjoyed in the fall (I'm talking tradition here, hell I even love hefe's in the winter and stouts in the summer). I'm looking for a little advice though for whats going to make an excellent EXTRACT wheat. One of the main reasons I'm wanting to do a wheat is that I attempted to harvest some WLP 380 Hefeweizen IV yeast. I threw it into some science glass with some glycerin and threw it into the freezer compartment on my mini-fridge.

The original beer was the brewers best (with the 380) which I think consisted of some hallertau with two cans of Munton's wheat LME. I thought the beer was good but could have been better. What LME or DME (single or combination) and what hop variety (with schedule pretty please) would you suggest? What about specialty grain? Would there be any point or enough benefit to use it for a simple wheat?

Hop of choice for a hefeweizen seems to be Hallertau Hersbrucker.


Schedule is up to you, I don't have a hefeweizen recipe yet. If I had to take a stab at it I would say that there isn't a large addition needed since the flavor comes from the malt and yeast.

Here's a Dunkelweizen recipe that I put together for summer:

Dark August Dunkelweizen

OG - 1.055
TG - 1.014
ABV - 5.63
Color - 21.5 SRM
IBU - 17.02

5.75 lbs. Wheat DME
14 oz. Crystal Malt 60L
8 oz. American Chocolate Malt
.9 oz. German Hallertau (Pellet) 60 min.
.5 oz. US Saaz (Pellet) 15 min.
.5 oz. US Saaz (Pellet) 2 min.
Wyeast 3068

Steep grains at 155F for 30 minutes in 1.5 gallon water. Remove grains and disgard. Bring to boil. Remove from heat and add DME. After hotbreak add Hops according to schedule.

Primary: 10 days at 68F
Secondary: 14 days at 68F

It turned out pretty damn good. I'm also making a hefe for the fall for my cousin and her boyfriend when they return home from Florida for Thanksgiving. I wouldn't worry about the beer gods. You're drinking good beer. That's all that matters to them.

i actually like tettnanger better than hallertaur for my hefes. i finished my last couple of hefes up with a touch of saaz, which was nice. i also add just a few ounces of munich malt which makes it just right.

i would drop the lme and just go with 6 lbs of dme or possibly even a partial mash. my next hefe is going to be the first dunkel-weisse i've done as a partial mash

Heh...as for the beer gods caring when you brew what.. I think they will just be happy that you are brewing. I don't have seasonal beers. I have beers that I like to drink. But I also drink Vodka Tonic all winter long, not just during the summer ..........

A Dunkelweizen as suggested earlier is a good fall beer. Or steep a few lbs flaked rye into a standard hefe recipe for a nice rye character. And ferment cool (60-65) if you can. Less fruity that way, better for cooler weather.

That dunkelweizen does sound pretty good. I think what I'm going to do is pitch the dunkelweizen ingredients onto a a yeast cake from a hefe I plan to make tomorrow night *IF* my harvested yeast did indeed turn out. Heres what I bought, somewhat on a whim and somewhat out of anxiety to hurry up with my day.

6lbs wheat DME
1oz hallertau
1oz tettnanger (spelling...?)
hopefully good 3080 hefeweizen IV yeast in the freezer.

What do you guys think of maybe doing a 60 minute with one of the hop variety and then an addition of the extra ounce at maybe 15. Which would you choose as the bittering, hallertau? I'm still a bit ignorant on hop subtleties so what would you guys notice between the two?
