Default Dr. Jones Indiana Pale Ale (IPA) - Comments/Criticisms

I have written 2-3 IPA recipes now, requested help on here a couple times, and i read some articles on American IPAs. I think i have come to a decent recipe. Please provide comments and criticisms.

Dr. Jones Indiana Pale Ale

Water

Good ol' super soft tap water

Mash

1 lb. Munich Malt
1 lb. Aromatic Malt
0.67 lbs. American Pale Malt
0.50 lbs. American Crystal 10L
0.25 lbs. American Crystal 40L
0.33 lbs. American Crystal 60L

150-152F for 60 min


Pre-Boil

Dissolve 7 lbs. LME into hot water and bring to 150-152F.

Drain wort into LME solution and hold for 15 min at 150-152F.


Boil

0.50 oz. Columbus (90 min)
0.50 oz. Centennial (20 min)
0.50 oz. Cascade (20 min)
0.50 oz. Centennial (10 min)
0.50 oz. Cascade (10 min)
0.50 oz. Centennial (0 min)
0.50 oz. Cascade (0 min)
2.0 oz. Cascade (dry)

1 tsp. gypsum (10 min) - Can you get this anywhere else besides a LHBS?
1 tablet Whirlfoc (10 min)


Yeast

Safale US-05

Looks pretty good as far as I can tell. Why the 90 minute boil though? It's a PM recipe so 60 minutes should work fine for the bittering. Also, I've never seen food grade gypsum outside of a LHBS. Someone had a thread about seeing some at a garden supply shoppe, but there were other things like fertilizers added to it.

I tend to over sparge and need the extra time to boil the water down.

I adjust as i go usually. I know the line on my pot where i need to start the 60 min timer.

Just from personal experience: If it's an Indiana Pale Ale the warter (see also: "water") shu'bee hard as Hell and chlorinated to high heavens.

How much water are you using to dissolve the LME?
