Default Dark Fruit Twist on American Amber Ale

Hey guys! I have been on here quite a bit lurking around, but I havn't been that active posting as much as i'd like, but I hope that will get to change now

I want to brew in a week or two, my first American Amber Ale. I am looking for something that is sweet and malty, and just balanced by the hops, not dominated, I want the hops to kind come in at the end and keep everything in check, but I want to malt to be a bigger contribution.

So, I went inside my handy dandy recipe crafting kit, and here is what I came up with.

Recipe Specs
Original Gravity--Final Gravity---Colour (SRM)---Bitterness--Alcohol by Volume
1.053-----------1.013----------23.5-----------28.0 IBU---5.2%

Brewhouse Specs
Recipe Type------Batch Size-------------Boil Time---Efficiency
All Grain----------22.7 Litres / 6.0 Gal----60.0 min----70.0%

Fermentables
Name-------------Type-----SRM-----Percentage----Amount
Maris Otter Malt---Grain-----4.0------64.00 % ------3.63 Kg / 8.00 Lbs
Carapils (Dextrine)-Grain-----1.0------12.00 % ------0.68 Kg / 1.50 Lbs
Crystal 40---------Grain-----40.0-----8.00 %--------0.45 Kg / 1.00 Lbs
Crystal 80---------Grain-----80.0-----8.00 %--------0.45 Kg / 1.00 Lbs
Special-B----------Grain-----180.0 ---8.00 %--------0.45 Kg / 1.00 Lbs

Hops
Name--AA%------Amount----------------Use Time
Perle---6.0%-----28.35 g / 1.00 oz Boil---60 mins
Perle---6.0%-----14.17 g / 0.50 oz Boil---25 mins
Perle---6.0%-----14.17 g / 0.50 oz Boil---1 mins

Yeast
Name------------Attenuation
Safale US-05-----75 %

Mash
Single Infusion 154F

I definitely want it to have some good body and excellent head retention, that is the reason for the higher mash temperature, and the large dose of carapills is meant to really keep the head up for a long time.

Finally, I am hoping that the special B, should give this recipe a distinct flavor that should set it apart from most other american amber's, i'm hoping that the dark fruit should get balanced quite nicely by the spiciness from the perle.

So, what do you guys think, do you have any recommendations? Any prior experience or comments?

Cheers!
