Brewing a Dubbel as we speak......SHould I add the syrup at the beginning or end of the boil? I know that it makes a difference in hop utilization, but according to Beersmith, the difference is negligable.
I do it in the beginning.. I've heard some people that say that you get a less carmelly flavor if you add it in the last 15 minutes.
For a dubbel.. I say do it in the beginning
I add it at the end figuring that you're not going to get much more caramelisation out of dark syrup... Probably doesn't matter either way.
I added my homemade dark candi syrup after a week in the primary and the yeast ate it all up in a few days.
So I ended up adding it at the beginning, just after the hot-break subsided.
