Carafa Special is debittered/dehusked, so you'll probably get closer to the flavour profile with regular Carafa I.

my selection of malt is

Code:
Premium Pils
Pale Ale Malt

CaraMunich II
Caraaroma
Carafa Special III
Smoked malt
Roasted Barley
Wheat malt
and
CaraPils
so i have to stay within that selection and change quantity etc.

Maybe a blend of Carafa Special and Roasted Barley to get a touch more roasted character?
