Default common/hybrid-opinions wanted

9.5 lb Pale Ale Malt
8.0 oz 2-Row Caramel Malt 40L
4.0 oz 2-Row Caramel Malt 60L
1.0 oz American Chocolate Malt
1.0 oz Northern Brewer (8.0%) - added during boil, boiled 60 min
1.0 oz Crystal (3.2%) - added during boil, boiled 20.0 min
1.0 oz Liberty (4.0%) - added during boil, boiled 0.0 min
1.0 lb Honey-added during boil, 10 min

for yeast i think i will either go with WLP001 or WLP060. i'm leaning towards the latter;hoping that will give more lager like qualities?

i dont know if that 1 oz of chocolate will do anything but i was aiming for a slight nutty taste.

the honey was used as a gravity booster and hoping to give it some interesting aroma being that it wont be a very hop-forward beer.

tell me if you love it, hate it, or whatever! no hard feelings.

Why not just use lager yeast? You could go dry with Saflager W-34/70 or S-189, or the natural choice of 810/2112. I think there's a certain void in the palate of a lager that no ale yeast can leave empty. Should be good either way, but you might want to get that nice little hole in the beer.

I don't know much about honey, but everything I hear is that if you boil it, you may as well just use sugar.

how about adding the honey at flameout? i might try this-if i dont get anything from the honey, maybe i'll add it after fermentation.

the reason i didnt try a lager yeast was because i cant ferment at lager temps. the coldest i can get is 58-61.i've used us-05 and i consistantly get a FG under 1010 with a lowest of 1006- that beer was very lager like. i figured i would get some not so desirable flavors. will any lager yeast work at the lower end of the ale temps?
