Default Cocoa!

Hey there!

So I'm putting together my next brew, which is going to be a chocolate ginger stout.

Now, I was told for the chocolate part of it, powdered bakers chocolate would be idea. The question is...how much would be good to put in for a 5 gallon brew? I was told that, depending on how prominent you want the chocolate taste to be there, 1-6oz would be ideal, but I'd like to get some more thoughts from the experienced home brewers here!

And any suggestions in regards to ideal malts to use would be much appreciated

Do some searching on HBT and average out your findings... for dark beers most people are using 8oz. That's what Jamil recommends in his Chocolate Hazelnut Porter

I would use 8 ozs, in the secondary. Mix it into a slurry before adding. If you add it dry, it will just sink to the bottom and not mix in.

In my double chocolate oatmeal stout, I used 1/2 container of Hershey's cocoa in the mash and half in the boil. Came out delightful.
