Recipes 

So I decided to try something that's kind of historic (pre-prohibition style) and not brewed much anymore. I really want to do this as a Lager, but will not be able to for a long time. Would an Ale yeast like Safale US-05 work instead? Would something else be better? I want it to be as close to style as possible. How different would it be as an Ale using a drier, crisper, cleaner Ale yeast? Thanks.

If you use a very clean ale yeast and ferment a low temperature ~62-65 ish you should get a pretty close. Us-05 will be nice, maybe a Kolsch yeast too.

It will never be a perfect lager, but it will be as close as you can get without using lager temperature or strains.

Keep your fermentation temps as low as possible. I try to keep it at 62*F, US-05 works just fine there.
