sounds interesting! I'm not sure that aging will do much...some of the chocolate flavor may subside, but since its already pretty smooth it may not change a whole lot. 8oz seems like alot of cocoa...but then again, I may be shooting in the dark with that since I havent presonally made a chocolate stout before. If nothing else, chocolate stouts make great desert floats with some good vanilla ice cream
