Default Chinook Hops Recipe Suggestion

I just realized that I have 8 oz.s of Chinooks hops. They were hiding in my inventory, and I totally forgot about them.

I have plenty of Maris Otter, 2-row, crystal 20/40/60 to accommodate most recipes. Can anyone suggest a good Pale Ale or IPA recipe? I am looking for suggestions. I was contemplating one of the stone clones, but am not sure. Looking to see what other like to use Chinook with.

12 pounds MO or 2-row
1.5 pounds of Crystal 120L

1.25 ounces chinook (fwh) 90 minutes
1.00 ounce chinook 30 minutes
0.50 ounces chinook flameout

OG: 1.071
Fg: 1.015

IBUs: 100


Another thing that I would try if I was lucky enough to have those chinook hops in an all-chinook IPA. CBBaron gave me a bomber of his, and it was awesome. Maybe he's posted the recipe, or you could PM him for it. It was really great!

I have done the Stone AB clone in the past and it was very good. I would like to see CBBaron's IPA recipe, so hopefully it gets posted! I am not sure how to send a pm.

The problem with my Chinook IPA that Yooper had is that it was the second runnings of my 09-09-09 Barleywine mash. So it will probably be pretty hard to replicate.

Here's the recipe as I entered into Beersmith. I used an efficiency of 32% with the full grain bill but achieved quite a bit less so I added some DME to bring the gravity back up. You may be able to reduce all the grains by the appropriate factor and make this as a single mash. I think it helped that this mash was 148F for 90 min so it fermented dry.

Take first 2 runnings for the Barleywine and supplement with DME to achieve target gravity. This should extract about 60% of the 80% efficiency (efficiency 48%) I usually get.

So here is a recipe that I just came up with. It is a little more than a typical American Pale Ale, and just makes it into the IPA category. Any suggestions or comments?

My comments on your recipe would be.
First don't be afraid of using Chinook as a late or dry hop addition. It gives a flavor quite different from the usual citrusy American hops. If you like Arrogant Bastard you will probably like a Chinook hop.
Second I would use a different yeast. The ESB yeast leaves considerable sweetness has noticable English style yeast esters. These characteristics deemphasize the hops compared to yeasts like American Ale or Dry English Ale yeast. You could probably make it work with a low mash temp, and maybe some sugar but i think you would get better results from a yeast that finishes dryer.

I tried the Chinook IPA kit from northern brewer, it only uses Chinook for the hops and it was fantastic. It had a grapefruit(y) flavor. Here's the recipe if you want to check out the hopping schedule Chinook IPA All Grain Kit -- Inventory Sheet

Thanks for the recipe suggestion. I put it in beersmith and it comes up with only about 40 ibu's. I would probably add a little more to get it up to 60 or so.
