I could just as easily called this "Leftover Ale"... Here is what I've come up with for today's brew. I'm putting it out there for your approval as I've never used Galena or Spalter. Feedback welcome - I'm gonna be getting started here in the next hour or so, so make it speedy!

I've used galena for bittering before and was impressed by the "clean" bitter. I've used spalter in late additions, and loved them. That looks like a winner to me!

I'm assuming you're using galena and cascades at 30 minutes for the bittering and to use up some leftovers and I think that will work just fine. Any later and I think the cascades would interfere with the fine aroma of the spalter.

Would you recommend just using Galena and Spalter and saving the Cascade? I have enough to make up for the Cascade...
