Default Centennial Single Hop IIPA

I'm kicking around recipe ideas for the centennial single hop IIPA I've been planning for a while. I'm pretty set on the hop schedule, but I'm wide open on changing the grain bill. I do partial mashes in a 3 gal cooler, so I can mash up to about 7lbs of grain. Current recipe shows an OG of 1.086 and an IBU of 89.8.

Why the wheat malt, out of curiousity? Usually don't see much wheat in IPAs.

Jar, that is A LOT of biscuit malt. I'd seriously back that down to only a 1/4 lb. A little goes a long way. Because you are steeping it, possibly a half pound. but no more than that, honestly.

OK. Thanks. That's why I posted. Note that I am mashing, I just can't mash enough grain to go AG because I brew in my kitchen. I use the setup in RichBrewer's thread.

Yeah, I've been making a bunch of beers in styles that I and most of my friends like, and now it's time to make one that most of them will hate. There are a few hardcore hopheads in the group, and they'll be getting bottles as Christmas presents

If you're interested, I'd love to trade a few bottles for some Pliny.
