Recipes 

I have a recipe calling for a pound of carastan malt in the grain bill, but it is currently unavailable to me. Can anyone suggest a good substitute? I've heard caravienne or just a light colored crystal from some people.

I've read that carastan is fairly close to caramel malt. Crystal 20 or caramel 20 would probably fit the bill just fine. The carastan at my HBS is carastan 20.

Thanks. I ended up going with a little bit of carapils instead b/c what I was brewing is intended to be a pretty full bodied beer.

I have read other sources since posting this and they all agree that a good substitute for carastan is crystal.
