I have a slightly different answer.
I agree with you that you shouldn't need to change the grains, but you need to replace the LME/DME with grains that give a similar profile to the amber extract.
Amber extract is usually made by a mixture of pale and crystal malt.
The recipe calls for 7.5 lbs amber LME.
7.5 lbs amber LME in a 5.25g batch would yield an OG of 1.053 and a color of 11.9 SRM
Assuming 70% efficiency, you could replace that with 9.5 lbs Pale malt and 1.5 lbs crystal 60
That would yield an OG of 1.052 and 11.8 SRM, which should be very close to the original for both color and flavor.
P.S. That looks like a lot of crystal to me, but I don't like excess crystal or brown ales, so I could be wrong. You may want to change it to 10 lbs pale malt and 1 lb crystal 80 which should give the same OG and SRM, but would reduce the crystal % to a more reasonable level.
