Brewing a lager soon with 57% Munich, 33% vienna and 10% Carahell. I've never used these malts standalone and have always had another base malt with higher DP in the mix. Will a single infusion still work with this grainbill?
I got the recipe straight from the owner of a brewpub in Berlin but he step mashes starting at 62°C (approx 143°F). If I can do a single infusion, what do you think? It's a vienna lager. Maybe 152°?
