LOL! I know that BuckWheat honey is, but i've also read that it has a really strong flavor.

Are you trying to make gluten free beer?

Yes, buckwheat can be fermented, but it needs to be malted and subsequently mashed to "free" fermentable sugars for the yeast. I suppose it could be prepared similar to other adjuncts (flaked or pre-boiled) and mashed with a diastatic malt (barley, wheat), but then it would no long be GF.
