Default Brewing one of my fave creations this weekend... MargaWITa

The Marga-WIT-a is radical. I'm brewing it this weekend and I thought I would share my recipe. Here's how it goes...

Start with your favorite Belgian Wit recipe.

Substitute about 15-20% of base malt with 1lb. Agave Nectar

Scratch the orange peel. Add zest of 3 limes instead.

Add half the coriander. (1/4 oz)

Ferment. (I like 3944)

The Agave gives it a little O.G. boost (should be above 1.050) and it seems to dry it out as well (should be below 1.010). So crisp and smooth, with a little tartness from the lime. I use half the coriander to tone down spice notes but still let it work with the citrus.

It sounds completely reasonable to me, but where do you buy agave nectar?

I can find light agave nectar at most grocery stores near the honey. The amber stuff supposedly gives more flavor to a fermented product. I found amber agave nectar at Whole Foods. FYI, agave nectar and agave syrup are the same product marketed under different names/name brands.

Your recipe looks pretty solid. It's just different enough to be interesting.

Hoosier you could steam a small amount of oak cubes with tequila and add them after ferm stops. Just a touch of course
-Oh yes and the recipe sounds fantastic I'm definetly trying it.

Well, I tried an Agave Wheat from Breckenridge brewery. It was good. The agave gave it a pleasant flavor. I think the tequila cube idea would add a nice flavor to the beer. can't wait to hear how it turned out.
