Default brewing with nuts...

I've been seeing a few beers POP up lately that either age on some sort of nut or maybe have them go into the boil. One I've seen was aged on almonds. Has anybody tried this? I've always thought that the oils/fats would cause some problems...like going rancid amount other things.

Most of the people I've brewed with are nuts.
