Default Brewed This Wit Yesterday.....

Mayself and my esteemed colleague ORRELSE brewed this up yesterday. Lemme know what you think:

June Wit

A ProMash Recipe Report

% Amount Name Origin Potential SRM-------------------------------------------------------------------------------
6.7 0.50 lbs. CaraPilsner France 1.035 10
6.7 0.50 lbs. Aromatic Malt Belgium 1.036 25
6.7 0.50 lbs. Flaked Soft White Wheat America 1.034 2
80.0 6.00 lbs. Alexander LME - Wheat America 1.037 4

Potential represented as SG per pound per gallon.

Hops

Amount Name Form Alpha IBU Boil Time
-----------------------------------------------------------------------------
1.00 oz. Czech Saaz Whole 3.40 12.7 60 min.
0.50 oz. Czech Saaz Whole 3.40 1.7 15 min.
0.50 oz. Czech Saaz Whole 3.40 1.1 2 min.

Extras

Amount Name Type Time
--------------------------------------------------------------------------
0.25 Oz Bitter Orange Peel Spice 15 Min.(boil)
0.50 Oz Corriander Seed Spice 15 Min.(boil)
0.50 Oz Bitter Orange Peel Spice 2 Min.(boil)
0.35 Oz Corriander Seed Spice 2 Min.(boil)

Yeast
-----

White Labs WLP400 Belgian Wit Ale

I went with straight Saaz hops, in hopes of making it a little more spicy than your average wit. I also used a tiny bit of crushed cumin (two additions of 1/8tsp). Don't wanna overdo it with that stuff!

I screwed up a couple things: First, I only meant to use .25lb of Carapils, but I used .50. No biggie. Then I boiled 6 gal, thinking I would lose a gallon in the boil. Well, I only lost about a pint, so my OG was a little low (1.043), but it'll still be good.

Pitched a healthy starter, and it's chugging right along as we speak. Can't wait to try this one!

Sam

Gotta love living in the swamp known as Virginia. I know I had a layer of sweat under my shirt during that entire boil. It was sticky!!!

Losing only a pint during a 60+ minute boil is ridiculous.

The beer is going to rock though.

Sounds great. I also brewed a Wit this weekend from BYO. 5.5 lbs Belgian Pilsner, 5.5 lbs malted wheat, 1.5 oz Hallertau for 60 mins, .5 oz crushed corriander and 1 oz bitter orange. Should be pretty good. I like the idea of cumin - very creative. I'd be interested to hear how it turns out.

I used to live in Hampton - Ft. Monroe to be exact. You couldn't pay me enough to go back. I'm more of a dry climate kind of guy.
