I am new to home brewing. I am interested in making a beer that would have a fresh baked bread smell and similar taste? Can this be done and how would you attempt this?
Adding .5 to 1 pound of biscuit malt to a brown ale or porter recipe, I think, would do the trick.

.5 lbs will help (biscuit) but if you are looking for an over the top obvious smell add a one lb or even 1.5 if you are feeling silly.
