I had great results mashing a pound of carafa special II. I would have used III but LHBS didn't cary it. Ymmv

mistercameron, sounds like you probably go to home brew mart too. I used carafa special II also because they didnt carry III and a pound of it made my IPA pitch black.

.25 lb Melanodin (or victory)
7 Lbs Dry Extra Light
1 oz Warrior or Columbus 60 min
1 oz Cascade 45 mins
1 oz cascade 30 mins
1 oz Amarillo 5mins

Default Once You Go Black IPA

7 lbs Pilsen/Light LME
1.5 lbs Crystal 15L
12 oz Carafa II
10 oz Special Roast
1 oz Columbus (60 Min)
1 oz Warrior (15 min)
1 oz Centennial (5 min)
1 oz Columbus (Dry Hop @ 10 Days)

Steep @ 155F for 1 hour. Primary for 10 days, secondary for 7. You'll never go back...

Best thing I have made so far. (I did a 60 minute boil and added an extra 1/2 oz of centennial at 10 min)
