Default Best use of limited Simcoe

I'm down to my last 2oz of Simcoe. I'm planning on a double ipa, as close as I can get to Pliny. I'll need to substitute for some of the Simcoe and I'm wondering when it is most important to use the real thing? Flavor, aroma, or dry?

I made this recently and it is a huge hit. Gotta find some more Simcoe as the 2nd keg is almost spent. I brewed it early October and will have kicked 2 kegs by the end of this month.
Recipe is for 12gallons but you have enough for a 5 gallon batch. This recipe appearred like there were not enough hops but it really spotlighted the Simcoe. It went from boil pot to glass in 3 weeks. I used WLP01 yeast in 1 carboy and WLP400 in the other.
