Pulled my second sample for gravity testing. Current gravity is at 1.009 so I dropped about 2 points in gravity since last week. Currently at about 8.2% ABV which is way too high for the style. The overall character of this beer is beginning to develop though and it's quite satisfying I must say. Most of the sulphur oder is now gone and it tasted very much like a Belgian wheat. Hoegaarden without the spice comes to mind (and much thinner with way more alcohol). It's not a bad thing, just not what I was trying to accomplish. I probably used too much wheat in the recipe.

'Kilgore Trout once wrote a short story which was a dialogue between two pieces of yeast. They were discussing the possible purposes of life as they ate sugar and suffocated in their own excrement. Because of their limited intelligence, they never came close to guessing that they were making champagne.'
