Default Basil

Ok, maybe I used a little to much basil in this batch maybe not, its still very young. But I can say the the herb seems to go very good with beer. Especially if you counter with a high alpha hop. I'm hoping the aroma/ flavor will settle some with conditioning and I won't use as much in the future. But if your looking to try something new I'd try basil. It seems to accentuate the malt and has a great nose. Especially if your a fan of sweeter beers.
6lbs pale LME
1 lb amber DME
1 lb honey malt
1 lb 40L
grains at 155 for 1 hr. and 175 for10 min.
1/2oz. whole centennial 1 hr.
1/2 oz.whole centennial 10 min.
1/2oz.fresh dried whole basil leaves 10 min.
2 Tbls. cocoa powder

They were dried from our garden that I had frozen a few months back. Still very pungent though!

ah, freshly dried...very good. how did the cocoa powder work out? i may use use basil for my next batch which is as yet unplanned.
