Aromatic substitute
|
|
I'm going to be making a Bitter.
In addition to using Maris Otter, I was going to add some Aromatic to enhance the biscuit notes.
Unfortunately AHS was out of Aromatic.
My LHBS doesn't have it either and is suggesting Cara-Amber as a substitute.
Will that work?
Any other ideas?

Biscuit Malt or Victory will be great in a bitter, doing the same thing you wanted the Aromatic to do.

If you are looking for biscuit flavors, Cara-Amber, Biscuit Malt or Victory, would all do a better job than Aromatic.

Aromatic is like Breiss Melanoidin and neither are really biscuity.

How do Cara-Amber, Biscuit Malt and Victory compare to each other?
What differences will I see in flavor, aroma, body, etc?

I think Biscuit and Victory are pretty similar to each other- they both give a nice malty kick and a little deeper color in a light colored beer. I haven't used Cara-Amber, but I do like Biscuit and Victory- I use them in bitters and in a Scottish that I just tried last night (excellent).

I made Jamil's Ordinary bitter and it was fantastic. Nice and malty.
6.00 lb Pale Malt, Maris Otter (3.0 SRM)
0.75 lb Caramel/Crystal Malt - 60L (60.0 SRM)
0.50 lb Special Roast (50.0 SRM)
0.10 lb Chocolate Malt (450.0 SRM)
1.50 oz Fuggles [4.50%] (60 min)
0.50 oz Fuggles [4.50%] (10 min)
I also took 1 pound of the MO and toasted it at 350 for 40 minutes. Nice and "bready".
