Default April's Amber

Finally got around to brewing up an amber for my GF. Should be ready about half way through April.

I was shooting for an amber a little on the sweeter side since she has been putting up with my IPAs for a while now.

I'm about half way through the boil right now. I'll let you guys know how it turns out.

April's Amber ---

1.051 / 12.6° Plato

Final Gravity
1.014 / 3.6° Plato

12° SRM / 23° EBC
(Copper to Red/Lt. Brown)

Bitterness
31.0 IBU / 4 HBU

Hit 1.051 OG. I pitched the S05 @ 69ish. The sample tasted a little more bitter than I'd hoped, but that should mellow during fermentation.

Now the wait begins.

Just checked the gravity today after 6 days. Down to 1.016. Will probably fall those last 2 pts over the next week. Not too worried about it if it doesn't.

The hydro sample tasted a little more hop forward than I would like. But like I said this is only 6 days after fermentation. Things will probably meld together nicely after a couple more weeks in the bucket.

If it is too hoppy in the end I'll brew the next one with 100% cascade, and skip the centennial.

I'm posting to myself here, but I'm using this as a journal now, lol.

Bottled this up today, got 54 bottles.

I think this is going to be a winner. I can't really taste the honey malt now, but I'm betting it will come through after bottle aging for 2-3 weeks.

Did you mash your malts (esp the 2-row and munich)?

Yes I did. I'll have to look at my notes, but I think I mashed around 154-155 for an hour. Dunk sparged at 170 for 10 mins.

The 2-row is in there just to make sure I got full conversion.
