Default apricot wheat all grain recipe?

I would like my first all grain brew to be an apricot wheat beer. Anyone have any recipes they would recommend? i haven't found much yet.

8.0 oz Rice Hulls (0.0 SRM) Adjunct 1 4.3 %
5 lbs 8.0 oz White Wheat Malt (2.4 SRM) Grain 2 47.8 %
4 lbs 8.0 oz Pale Malt (2 Row) US (2.0 SRM) Grain 3 39.1 %
1 lbs Munich Malt (9.0 SRM) Grain 4 8.7 %
0.25 oz Magnum [14.00 %] - Boil 60.0 min Hop 5 11.6 IBUs
0.25 oz Magnum [14.00 %] - Boil 15.0 min Hop 6 5.8 IBUs

I definitely recommend the rice hulls, they help with lautering. Being a wheat heavy recipe be sure to lauter it slowly or it could stick.

You could either pitch an American Wheat yeast or S-05, I'd probably use 1056 which is S-05.

And for the fruit you could either rack the beer in secondary onto apricot puree, fresh peeled and cut up apricots (remove stone) or use apricot extract at bottling or kegging.

For a first beer I'd use apricot extract. Your LHBS should carry some. Also your efficiency could be a little low for a first beer, mine was like 63%; so plan accordingly. This recipe is is planned for 1.050 at 72% efficiency.

And for bitterness I used Magnum cause I have a bunch for bittering. I shoot for about 10 to 15 IBUs. This recipe happens to be about 17 IBUs.

4 lbs Pale Malt (2 Row) US (2.0 SRM) Grain 44.44 %
8.0 oz Honey Malt (25.0 SRM) Grain 5.56 %
14.00 gm Williamette [5.50 %] (60 min) Hops 10.2 IBU
14.00 gm Williamette [5.50 %] (30 min) Hops 7.9 IBU
4.00 oz Apricot Extract (Bottling 5.0 min) Misc
1 Pkgs SafAle American Ale (DCL Yeast #S-05) Yeast-Ale

I got 68% efficiency, and this is about 12 points below my usual target (you may want to adj). Forget using real fruit. Use real fruit extract (nothing artificial) and add after you move it from the primary. I use this recipe with all my fruit wheats and have a raspberry wheat on tap as we speak. The recipe above came in at 18 IBUs and 1.045 OG.
