Default American Wheat Critique. Tell me what you think!

So here it is:

Batch: 10 gallon
OG: 1.052
FG: 1.012
SRM: 4.4
IBU: 29
ABV: 5.3%
Boil: 90 min
Mash: 151*

Grain:

10 lb - Pilsner
8 lb - White Wheat
2 lb - Munich

Hops:

2 oz - Cascade - 15 min
1 oz - Amarillo - 15 min
2 oz - Cascade - 10 min
1 oz - Amarillo - 10 min
2 oz - Cascade - 5 min
1 oz - Amarillo - 5 min
2 oz - Cascade - Flameout
1 oz - Amarillo - Flameout

Yeast:

WLP380 - Hefe IV

Let me know what you guys think.

12 oz of late hop additions seems like a lot. Is this a 10 gallon batch?

well according to style guidelines it wont really be an American Wheat:

" Low to moderate hop bitterness, which sometimes lasts into the finish. Low to moderate hop flavor (citrusy American or spicy/floral noble). Esters can be moderate to none, but should not take on a German Weizen character (banana). No clove phenols, although a light spiciness from wheat or rye is acceptable." (taken from bjcp style guideline for 6D American Wheat or Rye)

12 oz of late hop additions will make this a hop bomb, and Hefe IV will give you big clove phenols.

I guess it depends on what you're going for. Nobody says you have to brew to style. What do you want this beer to taste like? Whats the goal?

Default Amer. Wheat

Like the grain bill. Not so sure on the heavy use of late hops, plus the Hefe IV yeast.

The phenolic/spicy notes will be competeing with all the citrus hop flavors & aromas. American Wheat are supposed to be, " Refreshing wheat or rye beers that can display more hop character and less yeast character than their German cousins."

I've used a clean bittering hop like Warrior or Nugget @ 60 mins, and then an aroma addition at 8 mins left in the boil. Mabye even move the 0-min adds to a FWH... and use a neutral yeast profile like WLP001 or Nottingham...

Yes I agree with this. Here is the recipe I used for the american wheat I recently brewed:

(11 gallon batch)

Ingredients:
8.0 lb German 2-row Pils
11 lb German Wheat Malt Light
1.25 oz Tettnanger (4.5%) - added during boil, boiled 60 min
.5 oz Tettnanger (4.5%) - added during boil, boiled 10.0 min
1.0 ea White Labs WLP007 Dry English Ale (1L starter)

The result was a crisp, dry, easy drinking beer with subtle hop flavor and a very subtle fruity estery character. This recipe might end up too "light" tasting if you want something really full bodied, but I liked it.
