I can't speak to the Pacific Gem, but I like the grist and have used lots of Willamettes - they'll give a spicy, almost minty note in a darker beer when used as a late addition. If the Pacific Gem flavor compliments them, I think you'll have a very tasty brew.
What temp would you mash at? That Cali Ale yeast is pretty thorough, right?
