Default Amber ale a la Red Brick's Laughing Skull

Hey all, new on here and relatively new to homebrew. (3 batches)

Looking for suggestions for a DME based amber like Red Brick (ABC) has been churning out for a while in the form of Laughing Skull for the Vortex.

I'm planning on doing a steep with probably carapils as the main malt with some bread-y/toast-y stuff to give it some depth. Not sure where to go on the hops, but want to keep it true to style and not over do it.

I haven't looked up any clone recipes, but that's not really the goal. I just want something to call my own that is similar to what those guys are doing.
