I'm thinking of re-culturing the yeast from a 750ml bottle of Allagash Grand Cru for a batch of Grand Cru that I want to brew.
Has anyone had any success with this yeast? The reason I am asking is, I understand that some breweries protect thier proprietary yeast strains in bottle-conditioned beers by using another yeast for the bottle conditioning. I don't know if Allagash is one of these.
