So it's quite clear at this point. You can see the oak cubes on the bottom in the yeast cake.

Here's a picture from last week. I'm really having a hard time getting this to carb up. I increased the gas to 30 psi for the last week and I will recheck the carbonation after work and repost. At least the color is on par.

Much better! And the taste is amazing! It's just getting better! The more it's aging the more the faint coconut aroma and flavor is kicking in. I'm very pleased!

OK, so just had a bit more tonight and its as close to the real thing as you'll get (except clearer) without paying close to $18 a bottle! This is AMAZING!!!!! It just gets better with age. I can REALLY taste the coconut complexities now. I'm almost at the point where I can't believe I made this beer!

After two weeks in the bottle. A quick chill in an ice bath to bring it to serving temp. Bourbon is settling into the background and the oak is starting to shine through. Delicious!

Batch #2. It's taken longer to get to peak, but we're there now.

Camera adds 10 Lovibond, as usual.

Good luck, we tweaked ours recipe.

3.5oz of oak cubes and then we added another 6 shots of Bourbon at bottling.

Its still smooth, but very boozy with a slight hint of smokeyness.

Went ahead and racked to secondary on all the wood. Looked good and it was no change in FG.

Tasty but definitely not as clear as expected. But in due time... No rush.
