Default AHS Chimay Blue Clone kit

Removed the original post because I was impatient. It's a great beer kit!

Thanks for finding this thread - I had been searching for it and couldn't find it. After about six months in the bottle, it started to taste very good, and now it's really awesome.

Good to know. You scared me there. Did you use the fining agents?

I'm making a Rochefort 10 Trappist right now - almost ready to bottle. I'm debating pitching a 2nd yeast (as the recipe calls for 3 days before bottling) - it will have been in primary for 2 weeks and secondary for 4 more weeks - 6 weeks total before bottling. Did you pitch a 2nd time? Gravity is already down to 1.0265

Hey there -- just brewed this today, and hit OG of 1.086! (estimated on kit was 1.087) I forgot to add the yeast nutrient, but I did pitch two vials of yeast. Hopefully I should be OK.

I'm looking forward to trying this, and I really appreciate the warning that even if it tastes like ass at first, I need to wait and see.
