Should a saison brewed with 3711 be aged? if so how long? I read a BYO article that mentioned aging but that may have been with a different yeast.
I used it in one of mine this year. You can age it but you don't have to. I was drinking mine a month after bottling, but I saved some for aging as well. Same with an all-brett version I made.
i've drank it fresh and aged. i think it's best cold-aged around 4 weeks
