Default 5 Year Old Hops- hmm.....

So, how would you calculate alpha acid? Is there a formula for calculating deterioration? would you use them at all? i hear that lambics work well with old/aged hops, how would you formulate a recipe?

what about an "old" ale

No formula exists. Lambics use large quantities of aged hops to benefit from the preservative qualities without bitterness.

If they're vacuum packed and stored in the freezer, they should still be usable, but probably not for lambics.
