I am a big proponent of having someone who is familiar with sanitary practices watch your process. There might be some habit you are unconscious of that is introducting the infection.

Yea = tonight was a pretty big disappointment as an Imperial Stout with 8 oz of 2 different coffees (flame out and dry hop) and 4 oz of 2 different chocolate came up bad.
It was amazing after 1 week.
But - you have helped me feel better. NEW PLASTIC! makes sense.
Nothing works quite as well as retail therapy. Especially at the LHBS.
