Default Wiimote as a level sensor

I ran across this thread and immediately thought of homebrewing. I wondered if anyone here has tried doing this. The article says that it is accurate down to 1mm resolution. Could be useful in detecting water level/volume for automation. It's definitely a lot cheaper than some other solutions out there. Just a thought.
