Do I have to condition my new 20 quart stainless steel brew kettle?

No. Aluminum reacts and needs conditioning but stainless steel does not. I thoroughly scrub the inside of my stainless kettle to get everything shiny again but I only carefully wipe down the aluminum one so as to not remove the dark layer.
