Default Secondary Size

Should I be worried about headspace in my secondary?

I primary in 7.75gallon buckets but all of my carboys are 6 gallons (for doing wines as well as beer).

Should I get 5 gallon carboys for secondaries or does it matter?

Yes it matters very much. Beer is very sensitive to oxydation, particularly after fermentation and release of CO2 has slowed down.

Either increase your batch size, get a smaller carboy, or use sanitized marbels to take up the excess space.

I ferment in 6.5 galon carboys and use 6 gallon ones as my secondarys. Never had an oxidation problem yet
