Default S/S Conical fermenter

So I was looking on ebay and found a S/S conical fermenter for about 270.00 incl. shipping. CONICAL FERMENTER 7 GALLON STAINLESS HOMEBREW - eBay (item 290269190150 end time Oct-23-08 07:50:55 PDT)My question is: there are two valves on the tank. one directly below the bottom and one higher up and slightly off to the side. I assume one is used to get rid of the trub and the other is to rack off the beer. Am I even close?

You are correct sir!

The bottom one lets you harvest yeast. The higher one lets you rack your beer off the trub.

OK. lets assume I don't need/want to harvest yeast. (just for the sake of argument. I know it can save money, start a cleaner faster ferment....etc.) How can you get the trub out without also losing beer? Can ya tell I'm a little confused?

Dump the yeast/trub out the bottom valve when primary fermentation is finished. Open the valve out comes yeast/trub close the valve when you see beer flowing out. you will lose some beer but it's only a few ounces.

See. Now, I'm starting to get it. Beer is certainly not as straight forward as wine. (tongue firmly in cheek.)
